SPRING FLING WITH DANDELIONS

My favorite weed to eat is dandelions. Yes you heard me, dandelions. They have potassium, vitamins A, E, C and a bit of protein too. There are so many wonderful ways to use dandelions in your cooking. Such as dandelion tea, saute the buds with onions and garlic, dandelion salad, dandelion jam, dandelion jelly, there is adding to soup and even dandelion potato patties but my receipe share is sauteed
Dandelion Greens with Garlic
Ingredients:
1 lb dandelion leaves
2 tsp salt
1/4 cup olive oil
1 red chili pepper sliced in half( keep the seeds if you want a bit more spice)
1-2 cloves garlic minced
1/2 cup of onions diced
Directions:
1. Cut the roots off and wash the dandelion leaves thoroughly
2. Boil water and 1 tsp of salt. Add the leaves. Boil for 10 minutes.
3. Drain and wash leaves again. ( you can keep the water and make a soup with it)
4. In a skillet pan, saute onions. Then add in the garlic and chili pepper. using slow heat.
5. Add the dandelion leaves to the onion mixture and add salt to taste.
