SIMPLE COLESLAW

Cabbage is a good source of fiber. Key nutrients include calcium, iron, magnesium, phosphorous, potassium, vitamin A, vitamin C, Vitamin B6, vitamin B2, vitamin B1,vitamin B3, folate, amino acids to name a few. It can be eaten raw, cooked or juiced.
I like to have this around for a side dish or a quick snack. It is wonderful on fish tacos.
Ingredients:
¼ head of purple cabbage, sliced fine
¼ tsp sea salt
½ tsp caraway seed
½ tsp celery seed
½ tsp black pepper
2 tbsp minced onion
1 small carrot, grated
1 tbsp mayonnaise
1 tsp apple cider vinegar
½ cup sauerkraut
Combine cabbage with first four seasonings. Let mixture stand for a minimum of 30minutes, tossing occasionally. Add the remaining ingredients. This may be made the day before. Refrigerate.
