CHOCOLATE AVOCADO PUDDING

This recipe was a share from my friend Mike.

Avocados are a good source of monounsaturated fats. It has 4 grams of protein more than any other fruit. Some key nutrients are vitamin B1, vitamin B2, vitamin B3, calcium, folate, magnesium, vitamin D, zinc, vitamin C .

It can be eaten on its own, or add to a salad or smoothie.

Dark chocolate with a minimum of 70% cocoa is the better choice for chocolate. It has less carbohydrates and fats than its cousin milk chocolate. And there are a few nutrients you can get as well like iron, magnesium and zinc. I usually choose a raw dark chocolate with no sugar if I am having a chocolate craving.

Ingredients:

2 large Ripe avocados (about 2 cups)
6 tbsp unsweetened raw cocoa powder or grated raw chocolate
5 tbsp pure maple syrup
1/4 cup – 1/2 cup water, milk or milk alternative (coconut, soy or almond)
1 tsp vanilla
pinch fine sea salt

Place all ingredients into the food processor and whirl till perfectly smooth. Add more liquid if consistency is too thick.
Taste and add more maple syrup if desired. Refrigerate to chill.

May be stored up to 24 hours in the refrigerator.

Variations:

1/2 a banana
2-3 tbsp of nut butter. More liquid when be needed.
