FLUFFY GLUTEN FREE PANCAKES

Pancake Tuesday was always a favorite growing up. The pancakes my Grandma use to make where more like mini donuts.  Those pancakes were one of my favorite memories.

Ingredients:

3/4-1 cup almond vanilla milk
2 tbsp white vinegar
1 large egg or 2 medium eggs
2 tbsp coconut oil, melted
1 cup gluten flour
1 tsp aluminum free baking powder
1/2 tsp aluminum free baking soda
1/4 or less pink salt

In a small bowl, combine milk and vinegar. Let sit for 5 minutes to sour. Mix in eggs and melted but not hot coconut oil.

In large bowl, mix flour, baking powder, baking soda, and salt.

Add the milk mixture to the flour mixture. Do not overmix.

Lightly greased pan with coconut oil, pour 1-2 Tbsp into pan. Flip when small bubbles appear on the edges. if needed lower heat.

Makes 12 medium pancakes.
