BLUEBERRY BREAKFAST MUFFINS

Ingredients:
- 1 cup of rolled oats
- 1 ½ cups of gluten-free flour
- 1 teaspoon of baking soda
- 2/3 cup of plain yogurt
- 1 cup of rice/almond/soy milk
- 2 tablespoons of apple sauce
- 1 egg
- ½ cup of blueberries
- 1 tablespoon of cornstarch or tapioca starch
Instructions:
- Preheat your oven to 425 degrees Fahrenheit and grease a 10-inch square pan.
- In a large bowl, combine 1 cup of rolled oats, 1 ½ cups of gluten-free flour, and 1 teaspoon of baking soda.
- Add 2/3 cup of plain yogurt, 1 cup of rice/almond/soy milk, 2 tablespoons of apple sauce, 1 egg, and ½ cup of blueberries to the dry ingredients. Stir until well combined.
- Stir in 1 tablespoon of cornstarch or tapioca starch to add a bit of extra texture and binding.
- Spread the mixture into the greased pan and bake for 10-15 minutes, or until the muffins are fully set and a toothpick inserted into the center comes out clean.
