BLUEBERRY BREAKFAST MUFFINS

Start your day on a delightful note with these wholesome blueberry breakfast muffins. These muffins are not only delicious but also packed with nutrients, making them the perfect start to your morning.

Ingredients:

  • 1 cup of rolled oats
  • 1 ½ cups of gluten-free flour
  • 1 teaspoon of baking soda
  • 2/3 cup of plain yogurt
  • 1 cup of rice/almond/soy milk
  • 2 tablespoons of apple sauce
  • 1 egg
  • ½ cup of blueberries
  • 1 tablespoon of cornstarch or tapioca starch

Instructions:

  1. Preheat your oven to 425 degrees Fahrenheit and grease a 10-inch square pan.
  2. In a large bowl, combine 1 cup of rolled oats, 1 ½ cups of gluten-free flour, and 1 teaspoon of baking soda.
  3. Add 2/3 cup of plain yogurt, 1 cup of rice/almond/soy milk, 2 tablespoons of apple sauce, 1 egg, and ½ cup of blueberries to the dry ingredients. Stir until well combined.
  4. Stir in 1 tablespoon of cornstarch or tapioca starch to add a bit of extra texture and binding.
  5. Spread the mixture into the greased pan and bake for 10-15 minutes, or until the muffins are fully set and a toothpick inserted into the center comes out clean.
